It’s been several years since we’ve seen this much-loved coastal Island code in Australia (not counting a promotional 350ml bottle towards the end of 2025), and how good is it to have it return in our new Coastal & Maritime flavour profile?! No-nonsense, eight year old, 1st fill ex-bourbon barrel. But have a read of the panel’s tasting notes and you will fall in love. Spicy chocolate crème brûlée, flamed orange peel, honey-glazed smoke ham. Ooft. There are only 24 of these in the country and it was already a big hit at our recent Music & Malts tasting in Melbourne….don’t sleep on this one. It’s good to have Distillery 121 back.
Tasting Panel notes
We prepared a classic wedge salad of crisp iceberg lettuce topped with bacon crumbles, red onions, tomatoes and paprika, and dressed with a creamy, sweet and smoky vinaigrette. On the palate we found honey-glazed smoked ham and maple-smoked salmon burnt ends, served alongside a spicy chocolate crème brûlée and flamed orange peel. The aroma turned more maritime with the addition of water as we sat on a beach stoking a peat bonfire and eating sweet-cured hot-smoked mackerel and pork scratchings. To drink we had a glass of wine, a deep Californian zinfandel, with complex flavours of vanilla, spice, cedar and tobacco.
