Woodsmoke and stormy skies opened the nose, mingling with German smoked cheese, medical tinctures and cloves. While sitting on a damp, seaweed-laden rocky shore after rain we discovered an earthy, salty note, with a faint hint of strawberries steeped in antiseptic. The palate was a tidal wave of medicinal intensity, delivering cough sweets, smoky seaweed and a touch of madras powder mixed with linseed oil on a hospital ward. With water, myrrh and cloves burned in newspaper set alight on a wintry coastal day to start the campfire. The finish accompanied the campfire warmth with mulled wine spices, smoked monkey nuts, saffron and woodfired focaccia drizzled with balsamic oil. After spending eight years in an ex-bourbon hogshead, this was transferred to a second fill American oak oloroso hogshead for the remainder of its maturation.
