Description
On the neat nose, we imagined tucking into either blueberry pancakes with maple syrup and hazelnuts or savoury butter roasted sweet potatoes with brown sugar. On the palate, we enjoyed goose fat roasted new potatoes straight out of the roasting tin, as well as charred pineapple slices. After reduction, we were surprised by the welcoming aroma of a pork roast with crispy crackling and cinder toffee. To taste, a warm roasted salad, red cabbage, butternut squash, slices of orange and goat cheese in a walnut and red wine vinegar dressing – flavour-packed! Following nine years in an ex-bourbon hogshead, we transferred this whisky into a first fill American oak PX hogshead.
