Distillery 59 is one of the most complex and overlooked distilleries in Scotland. An old-school site filled with modern distilling equipment, and no single malt brand to talk of. A ‘dark site’ making incredibly complex and fascinating malt that goes almost exclusively into blends, except when we bottle single casks like this. After 13 years of full maturation from a hogshead, expect notes of berries, dark fruits, pine forest, and brown sugar. A wonderful sipper.
Tasting Panel notes
Soaking our liquorice allsorts in black tea, we added sugar and a slice of lemon, then stirred well with a leather spoon. The palate was full of dark berries, macerated with demerara sugar, sweet cinnamon and a dollop of lemon curd. Water took the Panel on a walk through a pine forest, the trees somehow growing apricots and marmalade sandwiches. The palate by now was a cloudy lemonade, with shavings of nutmeg, slices of conference pears and freshly baked chocolate chip cookies.
