Ex-bourbon into PX from Distillery 68? Yes, please! This distillery has a bit of a cult following with our Aussie members, and for good reason: they’re consistently unique. The underlying spirit quality is incredible, and I personally find when coupled with a further maturation period in a sherry cask, it really takes it to that next level of decadent flavour akin to a Christmas cake. Notes of dark chocolate, cinnamon and red wine-soaked cherries. An incredible 15-year-old at a very approachable natural cask strength of 56.4%.

Freshly squeezed orange and lemon juice were stirred into a glass of cool ginger beer with a drop of minted blackcurrant jam. A touch of smoked salt on the palate accented a gingery spice, with cinnamon and treacle adding further depth. Water initially brought forward fennel on the nose, followed by dark chocolate, peach and dried black cherries soaked in red wine, which were also apparent on the palate. A late emergence of eucalyptus offered a refreshing finish. After 12 years in an ex-bourbon hogshead, we transferred this to a first fill American oak PX hogshead for the remainder of its maturation.
