We smelled rich, dark sweetness (Christmas pudding, Eccles cakes, treacle toffee, black bun) and also a dusky, exotic note, like belly dancers in an antique bookshop. The gloriously sweet palate had marrons glacés, dates and demerara, sticky toffee pudding, caramel and cocoa; then warming clove, chilli and oak to finish. The reduced nose – funky, fascinating – was still dark and sweet, with additional hints of shellac, tarry timbers and cigars in ashtrays. On the palate now, the oak loomed larger, aniseed appeared, and we reported “eating biscuits from a pencil case” and “chewing elderberries off the twig”. This spent 11 years in ex-bourbon wood, before being transferred into a first fill Spanish oak oloroso hogshead.
