In what is now something of an annual tradition, the Society has again joined forces with our friends at Dunville’s Irish Whiskey to create this delicious small-batch release. Here, we are proud to present a beautiful triple-distilled Irish single malt matured in a combination of bourbon and oloroso sherry casks. Expect beautiful bourbon integration and more fruitier notes compared to last year’s Shimmering silk and Caramel cascade. This will be popular, don’t miss it.

Tasting Notes

The Panel found themselves rifling through a sunlit filing cabinet of aromas, including pear drops and green melon, sherry-soaked prunes, manilla envelopes and milk chocolate. Orange zest and tinned pineapple steeped in oloroso added a twist. To taste, a smooth texture carried orange liqueur-spiked coffee, more pear drops, chocolate lime and mandarin segments. This dram was bright, bittersweet and satisfyingly complex. With water, the nose turned doubly decadent: marzipan, blackcurrant pâte de fruits, dried cherries and polished leather met eucalyptus, menthol and candied walnuts, all dusted with a wee spray of furniture polish from a well-kept study. The reduced palate was exotic and fruit-forward, delivering melon and a “pineapple bananza!”, as one Panellist exclaimed. Banana bread with chocolate chips lingered, a final indulgent note from this tropical treat.
